*NOTE* You can add anything you want to a quesadilla! Other ingredients might include tomatoes, black olives, onions, mushrooms, green peppers, guacamole, whatever you have on hand!

Warm leftover pot roast. Shred using two forks. Mine had some onion in it for extra seasoning.

Lightly spread vegetable oil on one side of a flour tortilla.

Place tortilla, oil side down, in an unheated pan.

Add shredded beef on one side of the tortilla.

Heat black beans in the microwave or on the stove and add to beef.

Add lettuce.

Add cheese.

Add a dab of sour cream.

Place pan on a burner over medium heat.

When tortilla starts to brown and harden, flip one slide and press down. Be careful not to burn the tortilla!

Add another dab of sour cream and sprinkle with basil. Serve and enjoy!
