How to cook low temp steam ramps for pesto in a combi oven

Wash the ramps

Wash jars

Sterilize at 225F (107C) steam in the combi

Separate bulbs from leaves. Pickle the bulbs

Steam in the combi at 150F (65C) for 15 minutes with reduced humidity

Spray to shock

Roast walnuts,convection 350F (177C) for 5-8 min.

Chop ramp leaves then put in blender, add salt and pepper then add roasted garlic and some of its oil and the walnuts. Blend slow speed so you don't heat and add more oil as needed.

Should stay bright green

If saving, vacuume seal for 30 sec. To pull a vacuum
