Pour 1 cup of quinoa into a pot with 1 1/2 cup of water. Bring to a boil, then cover and switch to low heat for 20 minutes. Let quinoa absorb all the water.
Flatten the quinoa onto a baking sheet and put in the fridge to cool down for at least 20 minutes (the longer the better!)
Dice the zucchini, green onions, and white onion. Combine all into a bowl.
Cut the chicken into small, cubed pieces. Salt and pepper them lightly before cooking on a pan with medium heat. Set the cooked chicken aside in a bowl.
Scramble two eggs and set them aside in a bowl with the chicken.
Place one tablespoon of butter in the pan and then add the bowl with zucchini, green onions, and white onion. Cook for around 5 minutes, or until everything looks cooked through and soft.
Add another tablespoon of butter. Then add the quinoa and pour in 4 tablespoons of soy sauce. Mix together and let it cook for about 3 minutes.
Add in chicken and eggs and stir. Mix until all ingredients are blended together.
Serve and enjoy!
